Avocado Toast Ideas

Select healthy bread of choice and toast it. Then put sliced or mashed avocado and any of the following toppings:

  • My easy favorite: top with everything bagel seasoning & microgreens

  • ½ tsp turmeric with squeeze of lemon juice & dash of red pepper

  • Salsa with sprinkle of crushed tortilla chips

  • Tomato and basil

  • Hot sauce like siracha or sambal oelek with squeeze of lemon

  • Strawberries with balsamic vinegar

  • Nutritional yeast and red pepper flakes

  • Add parsley, lemon juice, salt, pepper, onion & garlic powder

  • Sprinkle with savory spice blend

  • Add pinch of salt, nutritional yeast, garlic powder & squirt of lemon

  • Add coconut bacon

  • Cashew cream, fresh lime juice, salt & pepper, crushed red pepper

  • Add radishes and fresh dill

  • Hummus and zaatar

  • Mushrooms that were sauteed in garlic

  • Nori flakes, chia seeds and walnuts

  • Spiced chickpeas, radish sprouts, sambal oelek, S&P

Sweet Potatoast!

Toast made out of sweet potato? Heck yes, I'll have 2!  Here's the basic way to prepare: Preheat oven to 350℉.  Trim both ends from the sweet potato.  Slice sweet potato lengthwise into 1/4-inch thick slabs using a knife or mandolin slicer. Place on a wire rack in the oven and bake for 15-20 minutes or until potatoes are tender but not fully cooked. Remove pan from oven and allow potatoes to cool on wire rack completely before transferring to a storage container. Sweet potato toast slices can be stored in an airtight glass container for up to 1 week. When you’re ready to toast it add the desired number of slices to the toaster oven and toast away. It usually only takes me a couple minutes to get my desired toastiness (not a word but sounds good) but yours might be different depending on your toaster.

 

Options:

Sprinkle it with some cinnamon and walnuts

Avocado & ‘everything bagel seasoning’ (and crispy chic peas)

Any nut butter & sliced banana (you could add cacao nibs, agave +/or cinnamon)

Avocado, crisp radishes for bite, red chili flakes for heat and lime

Almond butter, ground cinnamon and fresh blueberries

Tahini + Sesame Seeds + Goji Berries

Mashed Avocado + Sea Salt + Red Pepper Flakes

Crunchy Almond Butter + Cacao Nibs or pomegranates

Avocado, lemon, and salt
Pesto for non-vegan option
Nut butter topped with bananas, cinnamon, and cacao nibs
Mashed bananas and walnuts
Apple butter or Peanut butter and jelly. Sweet pepper jam is a fun option
Cumin and lime
Tahini and sliced dates or lemon

Other toppings you can add: chia seeds, flax seed, cinnamon + maple syrup, nuts, fig & agave
